If you haven’t noticed, groceries are crazy expensive,
especially meat! I’ve been trying
to make meat-free meals a couple times a week and this recipe was inspired by a
couple actual people and of course pinterest. It’s one of my new obsessions. Although it does have meat. I don’t really count pepperoni as a meat though, even in my
vegetarian phase. Yes, I know I’m
totally illogical. I’m okay with
that.
Preheat your oven to 350 degrees. While you’re waiting, cover a baking sheet in foil (or
parchment paper if you’re out of foil like me :) ) Then wash and cut your zucchinis
in half. Place them face down on
the baking sheet. You can coat
them with a little olive oil if you’d like but I’m usually so hungry I just
skip this step.
While you’re waiting for the oven to preheat you can mix up
the pizza part of this recipe.
Chop your pepperoni.
Combine the pizza sauce, chopped pepperoni, garlic, and Italian
seasonings in a bowl, and red pepper flakes and mix well. You could also add in sautéed onion,
green pepper, or olives but this simple mix is our favorite.
Bake the zucchini for 12-15 minutes. Let them cool a bit, just enough so you
can scoop out the innards.
Seeds. Whatever. Scoop out the insides and discard.
Scoop the pizza filling into the hollowed out
zucchinis. Top with a little
mozzarella cheese and bake for another 3-5 minutes or until the cheese has
melted and the zucchini is warm.

Zucchini Pizzas
Yields 2-3 servings
Ingredients
4 zucchini
1 c. pizza sauce
15 pepperonis, chopped (add more as needed)
1 ½ Tb. garlic (if you aren’t a garlic fan you should
definitely cut down on this)
1 Tb. Italian seasoning
red pepper flakes
mozzarella cheese
Preheat oven to 350 degrees.
Wash zucchini and slice in half. Place face down on foil lined baking sheet.
Mix pizza sauce, chopped pepperoni, garlic, and Italian seasoning
in a small bowl.
Bake zucchini, uncovered, for 12-15 minutes. Let cool to the touch and then scoop
out zucchini innards and drain the juice from the zucchini cavities.
Fill zucchinis with pizza sauce mixture. Top with mozzarella cheese.
Bake another 3-5 minutes or until cheese has melted and zucchini is warm.
